Chicken Soup Good For The Soul


I know there's truth to chicken soup being able to cure cold symptoms.  My little old italian grandmother swore buy it.  She would  whip up a pot when we were sick.  I make it just like she did.  Boy is it delish.

Italian Chicken Soup

1 whole chicken
4 celery stocks
1 large white onion
4 carrots
1 bay leaf
salt/pepper to taste
1 package Acini di pepe
1 cup romano cheese
7 eggs (beaten)

Place first 6 ingredients in a large stock pot and simmer for a few hours until the chicken basically falls off the bone.  Remove everything.  Chop veggies up and take meat off chicken.  Add all back to pot.  Cook pasta until aldante.  Bring stock to a boil and add eggs.  Keep stirring until they scramble in the broth.  Turn off and add pasta, chicken and vegetables.  Stir.  Add cheese.  Ladle into bowls with a good italian salad and crusty bread!

When I am not lazy...I love to make italian wedding soup.  It takes alot longer because you have to make very little, little meatballs for the soup and add spinach to the broth.  It is heavenly though.
